'Montagne Noire'

The old mountain called the « Massif Central » was raised again when the nees an the Alps wre created.

It bears various names depending on the area, and is called « Montagne Noire » on its South border.

It is made by rolling hills, getting lower and lower towards the plain where Carcassonne was built, as a latch between Toulouse and the Mediteranean.

These hills offer poor soil and hot weather, and are covered mainly with evergreen oaks and « garrigue ». There were built in medieval times the Cathare castles of Lastours.

Advice

Very dry, well drained, it is a mixture of clay with a high percentage of schists.

Not really suited for any culture but vines which thrive on this ground.

Merlot 100%

Harvest is entirely manual and the grapes are totally destemmed.

Wine making is traditional. Maceration lasts around 12 days with a temperature control at 28°C.

Serve between 14 and 16°C.

Red fruit bouquet, taste of ripe black cherry, with a soft tannin structure.

This wine will suit perfectly a pique nique or a barbecue party with friends.
