'Montagne Noire'

The old mountain called the « Massif Central » was raised again when the nees an the Alps wre created.

It bears various names depending on the area, and is called « Montagne Noire » on its South border.

It is made by rolling hills, getting lower and lower towards the plain where Carcassonne was built, as a latch between Toulouse and the Mediteranean.

These hills offer poor soil and hot weather, and are covered mainly with evergreen oaks and « garrigue ». There were built in medieval times the Cathare castles of Lastours.

Advice

Very dry, well drained, it is a mixture of clay with a high percentage of schists.

Not really suited for any culture but vines which thrive on this ground.

Varietals are :

Cinsault 34%
Grenache 33%
Syrah 33%

Harvest is entirely manual and the grapes are totally destemmed.

Static straining, direct pneumatic pressing, cold racking of the must ( 8°C), fermentation at 18°C maximum.

Serve between 8 and 12°C.

Aromas of strawberry, rapsberry. Slight acidulous taste with a nice soft finish.

This wine will match easy food on a terrace on a summer evening or be enjoyed on its own among friends.
