The 5 hectares owned by Louis Biscan in 1900 became Domaine Pujol when he married his daughter to Edouard Pujol in the thirties. Since then three generations have worked on the Estate.
Changes were performed by the two brothers in charge today, who made the property totally self sufficient, with its own bottling, a brand new cellar and aging facilities. A major investment which currently shows some return, with a quality no one argues with and lots of projects ahead for more improvement.

 
Soil

Domaine Pujol represents 50 hectares, 15 of which are Minervois AOC. Varietals that may be found in the AOC are Syrah (50%), Grenache Noir (20%), old Cinsault, over 30 years (20%) and old Carignan, over 50 years (10%).

The vineyards are located around Saint Frichoux, in an area where clay and gravels result from alluvium brought in the Tertiary. Vertical layers of sandstone and marl alternate, thus providing a very good drainage of the soil.

 
Wine making

Harvesting is mechanical except for the old Carignan picked by hand. The harvest is totally destemmed.

Wine making is traditional with temperature control. Maceration is made by varietal and lasts between 30 and 40 days according to tasting, with regular stirring of the lees and pumping over the cap.

Maturing and stabilisation in oak casks for Syrah, in vats for the other varietals.

Assemblage is as follows :
- 50% Syrah (with some wood ageing)
- 20% Cinsault
- 20% Grenache
- 10% Carignan

 
Drinking Advice

Serve at 16 / 18°C. The wine is powerful with subdued tannins and tastes of ripe red fruit.

It will match red meats, grilled or cooked, cassoulet or an array of flavourful cheese from Auvergne or Cantal. It will keep and improve for 5 to 7 years.
