Château Belot is a family enterprise which was built between 1987, when Jacques and Gisèle Belot bought their first vineyard, and 1996, when the Belot bought Château du Tendon, a former royal hunting lodge.
During these years, Lionel and Karine, the children, had joined the team. Lionel is now responsible for the day to day running of the winery.
The complete installation has been updated. Tthe addition of a maturing cellar and photovoltaic panels is part of the major works performed in the Château equipment.

 
Soil

The Estate sits on 25 hectares of St Chinian AC and 13 hectares of varietals : merlot, cabernet sauvignon and viognier.
80% of the ground is calcareous clay and the remainder schists.

 
Wine making

Varietals : 90% syrah and 10% grenache noir.

A harvest « in green » is performed in July in the selected parcels for a better bunch selection. Harvesting is manual for a yield of 30 Hl/ha. The harvest is totally destemmed.

Wine making is traditional. Maceration is around 35 days with a temperature control between 24 and 26°C. Pumping over the cap is performed twice daily to get the best possible extraction.

Maturing in oak vats lasts for 18 months, with two year old barrels. Barrels are selected according to the must and concentration in order to get fine tannins.

 
Drinking Advice

This wine is without filtration. It is therefore advisable to decant it before serving.

Opening ahead of time will also give the wine a better chance to breathe and express fully its complexity.

Serve at 18°C. This wine is a perfect match for venison and elaborate meat dishes, like « sauté de bouf aux olives » or stews.
