The 5 hectares owned by Louis Biscan in 1900 became Domaine Pujol when he married his daughter to Edouard Pujol in the thirties. Since then three generations have worked on the Estate. Today the property is totally self sufficient, with its own bottling, a brand new cellar and aging facilities.

A major investment which currently shows some return, with a quality no one argues with and lots of projects ahead for further improvement.

Clay and gravels result from alluvium brought in the Tertiary. Vertical layers of sandstone and marl alternate, thus providing a very good drainage of the soil. Thyme blossoms here in Spring.

Domaine Pujol represents 50 hectares, 15 of which are Minervois AOC.

Domaine Pujol represents 50 hectares, 15 of which are Minervois AOC. Varietals that may be found in the AOC are Syrah (50%), Grenache Noir (20%), old Cinsault, over 30 years (20%) and old Carignan, over 50 years (10%).
The vineyards are located around Saint Frichoux, in an area where clay and gravels result from alluvium brought in the Tertiary. Vertical layers of sandstone and marl alternate, thus providing a very good drainage of the soil. The soils for these old varietals are mainly xlay and chalk, with sandstone.

Separate fermentation under controlled temperature (20 to 25 degrees)
Long maturation.
Long maturing (18 to 24 months) after « assemblage ».

Serve at 16 / 18°C.

A wine with character and tannins, sudued but present, which will suit stew, venison, and many other types of Autumn and Winter dishes.
